THAI CLASSIC FAVOURITES SLIGHTLY MODIFIED On Saturday, I hosted several ladies for a private class based largely on my all-time most popular class, Thai Classic Favourites. Actually, I thought the replacements they made to the standard menu were imaginative and excellent! Mixed Vegetables were replaced by Papaya Salad and Green Curry Chicken replaced Red Curry. In any case, it was all good, as usual! As for the ladies, organizer Kirsten Roden wrote: “We enjoyed ourselves so much. The Thai Food was amazing. We all had a chance to get involved in the cooking while still relaxing and enjoying the food. Thank you again!”

THAI SEAFOOD FESTIVAL IN NORTH SAANICH That’s right, we hosted one of my favourite classes, “Thai Seafood Festival,” at my home last Sunday. It was not quite Thailand, perhaps, but it was a wonderful class, with lots of enthusiasm and fun for all. On the menu were: Thai Red Hot Chicken Wings, Hot & Spicy Soup, Tiger Prawn Curry, Asparagus Salad and Fish in Spicy Coconut Cream. Dessert was my famous Mung Bean Cake and Ice Cream. SENIORS LOVED GINGER BEEF AND FRIENDS Last weekend, I hosted one of my Seniors Only classes with “Ginger Beef and Friends” on the menu. This is a wonderful selection of dishes that features the “headline” dish, Spicy Ginger Beef, made with top quality beef. Other dishes included: Bitter Melon Soup, Thai Corn Fritters, Black Cilantro Ribs, and Mixed Vegetables. For dessert, we all enjoyed an unusual taste of another culture with my Plum Torté Cake, complete with ice cream. ROYAL CRIMSON FEAST IS BIG SUCCESS AT SENIORS CLASS This is one one of my latest classes and, so far, it sure looks like a hit. At my Seniors Only class on Sunday, an enthusiastic group of students definitely gave me the thumbs up. Besides the signature “Royal Crimson Chicken” dish, there were a number of other wonderful dishes on the menu: Thai Salad Rolls, Hot and Sour Smooth Tiger Prawn Soup, Yellow Curry, and Mixed Vegetables with ChilLi Sauce. AMAZING RECIPES DISCOVERED ALONG THE MEKONG! Yes, it’s true, there are some delicious dishes to be found in the most remote places in the world! Even in North Saanich you’d be amazed at how many great Thai dishes can be found at Kallayanee’s Kitchen! That happens especially when I lead my students on an imaginary exploration of the mighty Mekong River, which flows through Thailand and other Southeast Asian countries. CYCLISTS DISCOVERED US ON NORTH SAANICH FLAVOUR TRAIL! Here’s what one lovely lady wrote about her experience with us last weekend: “With friends, my husband and I put our biking passion to a good purpose on August 18th, navigating the 'North Saanich Flavour Trails' Map. 'Kallayanee's Thai Kitchen' was one of the fifteen locations to explore. Chef Kallayanee presented her complimentary Thai Curry Soup to visitors. The four of us friends were totally in awe of the flavourful soup. “Upon further questioning, we all decided to sign up with Kallayanee for one of her Thai Cooking Classes! It didn't take long to browse through her detailed recipe books and decide that we would sign up for the ‘Imperial Thai Duck Banquet’ and ‘Thai Barbecue Lamb Supreme’ Cooking Class. “Afterward, over several calls and emails to friends, I was able to gather 12 of us for the September 25th cooking class date! “On the day, September 25th, Kallayanee and assistant Chie led our class with so much knowledge, hands-on guidance, and humor! THERE IS A REASON WHY CLASSICS ARE CLASSIC! I have been teaching my Thai Classic Favourites class ever since I first started my cooking classes in 2006. It has always been my most popular class and I guess it will always be the crowd favourite. A THAI SEAFOOD FESTIVAL CAME TO NORTH SAANICH ON SATURDAY Well, sort of… Actually, I was teaching my “Thai Seafood Festival” class on Saturday at my home. But, as my North Saanich home feels like Thailand on most days, except when it snows, I did feel like I was hosting a real seafood festival! And as everyone at the class was having so much fun, they sure looked like they were enjoying a festival! The food certainly tasted like festival food, including: Thai Red Hot Chicken Wings, Hot & Spicy Soup, Tiger Prawn Curry, Asparagus Salad, and Fish in Spicy Coconut Cream. But the most festive food of all was my Thai Mung Bean Cake for dessert! JUNGLE VEGETARIAN FEAST FEATURED IN NORTH SAANICH I hosted my vegetarian class, “Jungle Curry Veggies,” last Sunday to an enthusiastic class of enthusiastic vegans and vegetarians! These people pitched into the food preparation, tasting, and eating with joyful abandon. As a matter of fact, even their joyful abandon was enthusiastic! Anyway, they all had a perfectly good reason to be happy. Five good reasons, to be exact: Gang Paa, Pat Peow Wan, Tod Pak, Nam Pik, and last but not least, Gang Pit. I apologise for not yet being able to translate these words into English. Someday. And after all of this, there was Sticky Rice and Mango for dessert. SAMUI ISLAND TREATS TANTALISE VANCOUVER ISLAND STUDENTS It’s true! On Saturday, I hosted my Samui Island Festival class, which is becoming one of my most popular classes. And for very good reasons! BIRTHDAY BOY CELEBRATES 60TH AT KALLAYANEE’S KITCHEN Jean was the lucky recipient of a birthday class for eight people with me on Sunday. Wife Lois had made all the arrangements. Jean had just turned 60 and was feeling every inch his “Inner Teenager.” Oddly, his emotional age was infectious and pretty soon everybody revealed their own “Inner Teenagers,” even me! In short, we all had a lot of fun! And the food, as usual, was great with items like: Thai Spring Rolls, Phad Thai Noodles, Coconut Soup, Red Curry Chicken, and Mixed Vegetables with Cashew Nuts. THAI DUCK FALLS VICTIM TO PIERS ISLAND BIRDS ��Inger Bird is a lucky lady, with homes in both London, England, and Piers Island, just off the Schwartz Bay Ferry Terminal. Recently, she requested a private class for one of my Premium classes, “Thai Imperial Duck Banquet.” On Friday, she brought her daughter and three grandchildren to the class, along with another Piers Islander, Gloria Morson. I always enjoy hosting this class, mainly because of the duck, which I prepare with a delicious secret marination sauce. Also on the menu were: Phad Thai Noodles, Tiger Prawn Money Bags, Creamy Coconut Soup, Grapefruit Salad and Agar Fruit dessert. MUSCLEMEN CRUNCH SPICES AT THAI COOKING CLASS I take great pride in my authentic Thai curry classes. All the herbs and spices must be crushed in a traditional mortar and pestle to preserve the wonderful flavours and aromas of the ingredients. A blender or a Magic Bullet simply will not do. The downside of this technique is that a lot of hard work is required. Fortunately for me on Sunday, I had three strong men to help. They were wonderful and the curries they helped to make were great! These included: Red Curry, Yellow Curry and Panang Curry. SENIORS BREAK FUN RECORD AT THAI COOKING CLASS It’s true. My Seniors Only class yesterday was the most fun I have ever enjoyed at one of my cooking classes. And who would have thought Seniors would be able to break the fun record? But they did! Forget about teenagers! They don’t have the stamina. It might have had something to do with the food, though. This was my Royal Crimson Chicken Feast and there was a lot more than just the chicken! THAI COOKING CLASS BRINGS BACK MEMORIES OF SAMUI ISLAND Last Saturday, I hosted my “Samui Island Festival,” a class I created in honour of Samui Island, in the south of Thailand. It’s a wonderful place to visit and home of the famous golden 12-metre tall “Big Buddha” statue. The statue serves as a major attraction for major Thai festivals and attracts crowds of locals and curious tourists. The island offers a host of wonderful seafood restaurants and outdoor food stands where I learned about the delicious food I prepare for this class. The dishes include: Samui Seafood Soup, Thai Salad Rolls, Spicy Chicken Salad, Coconut Beef, and Sweet & Sour Whitefish. It’s not as spectacular as my popular Thai Classic Favourites, but the class is a great favourite for many people, especially as it includes the delicious Thai Style Sweet and Sour Pork Ribs, with ginger, garlic sauce and special Thai spices. Drunken Noodles Lose it at Thai Cooking Class Long story short, I should have known better, I guess. There were lots of signs that the Noodles were getting restless, especially when my students were having an especially good time at the class. Drunken Noodles have one major flaw: they like to be the only ones having fun. And so they started squeaking and bubbling in protest while I was serving them out. Fortunately, they were gobbled up almost instantly by my hungry students just as they wolfed down all the other delicious items: Thai Prawn Cakes, Chicken with Rice & Dipping Sauce, Beef & Basil Stir-Fry, and Hot & Spicy Vegetables. KHON KAEN THAILAND VEGGY FAVOURITES WERE A WEEKEND HIT! We had a lot of fun with this vegetarian class on Saturday. Students really had to get involved in tough hands-on work with some of the dishes, which required some fancy finger maneuvers. On the menu for the class were: Khon Kaen Noodle Soup, Thai Mixed Vegetable Wrap, Spicy Tofu Omelette, Tangy Tofu Ginger Snaps, and Eight Spices Puffed Tofu. The dishes combine a fantastic array of spices and aromas in one class, with chillies and lime juice, sliced Taro Root, Shiitake mushrooms, Juniper and Star Aniseed among some of my favourites. I hosted one of my favourite curry classes on Saturday, Curry Class Two, “Hot & Sour.” On hand were a hard-working bunch of students eager to learn the mysteries of Thai curries. I love these classes a LOT. I want students to really understand how raw herbs and spices work together. And I try to open up a world of traditional Thai cooking for people who have never experienced these historic delights before. It can be hard work, though, as people confront a mortar and pestle for grinding and mixing ingredients. No blenders or Magic Bullets for this class! THAI CLASSIC FAVOURITES FOREVER! We started our little business back in 2006, after a friend suggested that many people might enjoy learning how to cook Thai food. We had not really considered this option but it was certainly worth a try and we experimented at first, with classes in our own home. Later, we hosted a class at Pender Island, in the Gulf Islands, and packed a little restaurant on the island with eager customers. This convinced me that we just might make this idea work. Since that time, Thai Classic Favourites has always been our very most popular class and continues to be so. Last Sunday, I once again hosted this class and, once again, people had a wonderful time. I am very pleased that so many people have enjoyed this class and will continue to offer it in future. THE DELICIOUS DIFFERENCE OF HOME-MADE THAI CURRIES There is simply nothing like the flavour and aroma of Thai curries made by hand with loving care. I do not even use a “Magic Bullet,” or blender to grind and blend the ingredients. This work must be done by hand, the old-fashioned traditional way that my grandmother used to make curries and other dishes in the village of my youth. And so this is the experience that I share with my students every time I host my curry class, “Smoke & Fire,” as I did on Saturday. Luckily for me, I had some great volunteers who enthusiastically pitched in to help. The results, as always, were amazing! SPECTACULAR APRON LIGHTS UP THAI CLASSIC FAVOURITES CLASS I have been teaching my most popular class, Thai Classic Favourites for nearly 20 years now. So, I thought nothing about this class could ever surprise me. I was wrong. On Sunday, one of my students came to class equipped with an apron that was not at all like the usual standard apron I provide for all my students. This new apron was really quite spectacular and very unusual for a male student. But I let it go. Why not? Nobody paid much attention anyway with all the usual goodies on the menu: Thai Spring Rolls, Phad Thai Noodles, Coconut Soup, Red Curry and Mixed Vegetables with Cashew Nuts. STILL NOTHING BUT THAI CLASSIC FAVOURITES TO REPORT! It’s true. I reported on my Saturday class, Thai Classic Favourites, yesterday… Or was it the day before? In any case, that class was definitely a Thai Classic Favourites class, as was Sunday’s class, that I am now reporting on a Wednesday. Anyway, as usual on SUNDAY, we all had a lot of fun preparing and eating the great hits of the class: Thai Spring Rolls, Phad Thai Noodles, Coconut Soup, Red Curry and Mixed Vegetables with Cashew Nuts. No wonder they are the Thai Classic Favourites that make this class my all-time most popular! Plus, Sunday’s class included a special dessert: Sticky Rice and Mango. THAI CLASSICS ONCE AGAIN PROVE THEIR WORTH ON SATURDAY I was on duty teaching my Thai Classic Favourites on Saturday. It’s the most popular class of all my 21 classes. True, the “Drunken Noodle Party” class is catching up, but it has a long way to go. And, yes, my two Curry Classes may even end up overtaking the “Noodles.” But, I can only say that the Classics have FIVE good reasons why they are so popular. THAI SPICY GINGER BEEF TOP PICK IN SENIORS ONLY CLASS ON SUNDAY The menu I created for this class was new, only a few weeks old. However, I think it may become one of my most popular. But don’t just take my word for it! Ask any of the Seniors who came on Sunday to enjoy the dishes they helped to prepare. The menu included: Thai Corn Fritters, Bitter Melon Soup, Black Cilantro Ribs, Mixed Vegetables, and Spicy Ginger Beef. For dessert, it was a refreshing treat, Sticky Rice and Mango. HOME-MADE THAI CURRIES MADE FROM SCRATCH I hosted one of my favourite classes on Saturday, Curry Class One, or “Smoke & Fire.” In this class, I teach people how to make a variety of Thai curries from authentic, fresh ingredients, just as we did years ago in Thailand. We go right back to the basics and yesterday I put some good, strong men to work crushing and grinding ingredients with a mortar and pestle. They did a great job! Other students took over preparation of the class signature dishes: Panang Curry, Yellow Curry and Red Curry. As always, they were delicious!
