CYCLISTS DISCOVERED US ON NORTH SAANICH FLAVOUR TRAIL! Here’s what one lovely lady wrote about her experience with us last weekend: “With friends, my husband and I put our biking passion to a good purpose on August 18th, navigating the 'North Saanich Flavour Trails' Map. 'Kallayanee's Thai Kitchen' was one of the fifteen locations to explore. Chef Kallayanee presented her complimentary Thai Curry Soup to visitors. The four of us friends were totally in awe of the flavourful soup. “Upon further questioning, we all decided to sign up with Kallayanee for one of her Thai Cooking Classes! It didn't take long to browse through her detailed recipe books and decide that we would sign up for the ‘Imperial Thai Duck Banquet’ and ‘Thai Barbecue Lamb Supreme’ Cooking Class. “Afterward, over several calls and emails to friends, I was able to gather 12 of us for the September 25th cooking class date! “On the day, September 25th, Kallayanee and assistant Chie led our class with so much knowledge, hands-on guidance, and humor! The ingredients and the preparation techniques were phenomenal! “Our circle of friends highly recommend experiencing a Kallayanee Thai Cooking Class! THERE IS A REASON WHY CLASSICS ARE CLASSIC! I have been teaching my Thai Classic Favourites class ever since I first started my cooking classes in 2006. It has always been my most popular class and I guess it will always be the crowd favourite. Westerners just love all the menu items in the class, including Thai Spring Rolls, Phad Thai Noodles, Coconut Soup, Red Curry, and Mixed Vegetables with Cashew Nuts. I love these items also, but I always try to persuade my students that there is much more to learn in Thai cooking. A THAI SEAFOOD FESTIVAL CAME TO NORTH SAANICH ON SATURDAY Well, sort of… Actually, I was teaching my “Thai Seafood Festival” class on Saturday at my home. But, as my North Saanich home feels like Thailand on most days, except when it snows, I did feel like I was hosting a real seafood festival! And as everyone at the class was having so much fun, they sure looked like they were enjoying a festival! The food certainly tasted like festival food, including: Thai Red Hot Chicken Wings, Hot & Spicy Soup, Tiger Prawn Curry, Asparagus Salad, and Fish in Spicy Coconut Cream. But the most festive food of all was my Thai Mung Bean Cake for dessert! JUNGLE VEGETARIAN FEAST FEATURED IN NORTH SAANICH I hosted my vegetarian class, “Jungle Curry Veggies,” last Sunday to an enthusiastic class of enthusiastic vegans and vegetarians! These people pitched into the food preparation, tasting, and eating with joyful abandon. As a matter of fact, even their joyful abandon was enthusiastic! Anyway, they all had a perfectly good reason to be happy. Five good reasons, to be exact: Gang Paa, Pat Peow Wan, Tod Pak, Nam Pik, and last but not least, Gang Pit. I apologise for not yet being able to translate these words into English. Someday. And after all of this, there was Sticky Rice and Mango for dessert. SAMUI ISLAND TREATS TANTALISE VANCOUVER ISLAND STUDENTS It’s true! On Saturday, I hosted my Samui Island Festival class, which is becoming one of my most popular classes. And for very good reasons! One reason is the delicious food, which includes a wonderful assortment of flavours to tantalise my students: Spicy Chicken Salad, Thai Salad Rolls, Samui Seafood Soup, Coconut Beef, and Red Snapper. The other reason is that my students seem to catch the spirit of Samui Island with its carefree vacation atmosphere and waves rolling gently over the sands. It’s just the way I want it to be because it’s a great class and I’d like lots of people to experience it. And, as usual, there was Mango and Sticky Rice for dessert. This time, it was a private class for a wonderful family, organized by April Miller. DOWN THE MEKONG IN NORTH SAANICH SATURDAY A hosted a sturdy bunch of adventurers at my class on Saturday, “Along the Mekong.” The class celebrates my visits many years ago to the Mekong River region in Thailand. My students were eager to discover the delicious riches to be found there. Long story short, they were NOT disappointed. BIRTHDAY BOY CELEBRATES 60TH AT KALLAYANEE’S KITCHEN Jean was the lucky recipient of a birthday class for eight people with me on Sunday. Wife Lois had made all the arrangements. Jean had just turned 60 and was feeling every inch his “Inner Teenager.” Oddly, his emotional age was infectious and pretty soon everybody revealed their own “Inner Teenagers,” even me! In short, we all had a lot of fun! And the food, as usual, was great with items like: Thai Spring Rolls, Phad Thai Noodles, Coconut Soup, Red Curry Chicken, and Mixed Vegetables with Cashew Nuts. THAI DUCK FALLS VICTIM TO PIERS ISLAND BIRDS ��Inger Bird is a lucky lady, with homes in both London, England, and Piers Island, just off the Schwartz Bay Ferry Terminal. Recently, she requested a private class for one of my Premium classes, “Thai Imperial Duck Banquet.” On Friday, she brought her daughter and three grandchildren to the class, along with another Piers Islander, Gloria Morson. I always enjoy hosting this class, mainly because of the duck, which I prepare with a delicious secret marination sauce. Also on the menu were: Phad Thai Noodles, Tiger Prawn Money Bags, Creamy Coconut Soup, Grapefruit Salad and Agar Fruit dessert. MUSCLEMEN CRUNCH SPICES AT THAI COOKING CLASS I take great pride in my authentic Thai curry classes. All the herbs and spices must be crushed in a traditional mortar and pestle to preserve the wonderful flavours and aromas of the ingredients. A blender or a Magic Bullet simply will not do. The downside of this technique is that a lot of hard work is required. Fortunately for me on Sunday, I had three strong men to help. They were wonderful and the curries they helped to make were great! These included: Red Curry, Yellow Curry and Panang Curry. Other items on the menu were: Bangkok Noodle Soup and Sticky Rice and Mangos for dessert. SENIORS BREAK FUN RECORD AT THAI COOKING CLASS It’s true. My Seniors Only class yesterday was the most fun I have ever enjoyed at one of my cooking classes. And who would have thought Seniors would be able to break the fun record? But they did! Forget about teenagers! They don’t have the stamina. It might have had something to do with the food, though. This was my Royal Crimson Chicken Feast and there was a lot more than just the chicken! Other items included: Thai Salad Rolls, Hot & Sour Smooth Tiger Prawn Soup, Yellow Curry, Mixed Vegetables with Chilli Sauce, and Sticky Rice and Mango for dessert.
